Turkey and broccoli lasagna was what we had for dinner tonight. I was rather worried about it since I'm not a huge broccoli or cottage cheese fan but I ended up liking it! B on the other hand wasn't a huge fan...
Ingredients:
Two containers cottage cheese
1 large shredded head of broccoli
1 TBSP garlic powder
1 cup chopped onion
1 1/4 pound turkey meat
Whole grain noodles
Grated Parmesan cheese
1 TBSP olive oil
ONE: cook the turkey, olive oil, onion and garlic powder in a skillet until brown. While doing this cook your noodles according to the box. Begin preheating over to 350 F
TWO: layer your lasagna in the pan first. Cover this with half your meat, then half your broccoli, 1 container cottage cheese, and 1/2 cup Parmesan cheese.
THREE: repeat step two. Use your remaining noodles for your top layer and cover them with 1/2 cup Parmesan cheese.
FOUR: loosely cover your pan with ton foil and bake for 45-55 minutes until your juices are clean. Allow to cool for 5 minutes before digging in!
This recipe was actually super easy and I'm really happy with the turn out. Its a great way to get some added veggies in your life!
