Sunday Supper (on Monday)

I've decided to start posting updates on our new clean eating lifestyle. Every Sunday will be Supper Sunday and boy do I have a great post for you. I know today is Monday and I'm a little late -__- already starting off on a bad note! 

Last night we had an amazing dish, pineapple pork tenderloin. It was delish. I wasn't sure how everyone would feel about the pineapple but thankfully my boys torn it up! 



This recipe serves 8 people so we had tons of leftovers!

Ingredients:
1lb pork tenderloin
Olive oil cooking spray
1 pineapple, cored, peeled and cut into 1/2 inch pieces
1Tbsp Balsamic vinegar
1Tbsp real maple syrup
1/4 tsp sea salt 
1/4 tsp ground black pepper

ONE: preheat oven to 375F. Rinse the tenderloin under cool running water and pay dry. 

TWO: heat a large skillet on medium-high. Mist lighty with olive oil cooking sprat and place tenderloin in. Sear your tenderloin until it's nicely browned on all sides (this takes about 3-4 minutes a side). After seared remove your tenderloin and place in a backing dish. 

THREE: immediately place pineapple chunks in skillet. Sauté them for around 3 minutes (let them get a golden caramel color). 



FOUR: while your pineapple is cooking mix together vinegar & syrup in a small bowl. Add this to the pineapple and reduce heat to simmer for 1 minute. 

FIVE: pour the pineapple mixture over your tenderloin and sprinkle with salt & pepper. Pop your tenderloin in the oven for 40-45 minutes or until the juices run slightly pink. 



This meal was amazing and only 290 calories per serving!

    We've been doing our "clean eating" for a few weeks now but we mainly do chicken and salmon and tilapia for meats but I'll have to try this!

    I don't like pineapple.. But I'll take one for the team and try it out because Christian likes it haha

    1. To my surprise the meat didn't have a very strong pineapple flavor. We normally eat chicken and turkey but I'm trying to widen our meal choices so we don't get burn out.
